Pumpkin Bread 1

3 cups sugar
1-1/4 cups oil
4 eggs
1-1/2 teaspoons salt
3/4 cup water
2 cups pumpkin
2 teaspoons baking soda
1/4 teaspoon ginger, ground
5 teaspoons cinnamon, ground
2 teaspoons nutmeg, ground
1/4 teaspoon cloves, ground
2-1/2 cups pecans, chopped
3-1/2 cups all purpose flour

Ginger Cream Topping:
1 cup whipping cream
3 tablespoons sugar
1 teaspoon ginger

Mix sugar, oil and eggs together. Add remaining ingredients. With cooking spray, generously grease four 13 ounce coffee cans or loaf pans. Fill cans half full and bake 1 hour at 350F. Take out of cans while still warm. Stand on flat end.

To prepare optional ginger cream topping, beat whipping cream, gradually adding sugar and ginger until soft peaks form. Slice bread, top and enjoy.
