Almond Bread

1/2 cup butter or margarine
3/4 cup sugar
1 egg
2 cups all-purpose flour
1/4 tsp baking powder
1/4 tsp baking soda
1/8 tsp salt
1/2 cup half-and-half or milk
1/2 cup blanched almonds, finely copped
1/4 tsp almond extract
1 cup (8 oz) glace colored pineapple, diced or wedges, chopped
1/4 cup (2 oz) diced fruit and peel

Beat butter and sugar in medium bowl until fluffy; beat in egg. Mix in combined flour, baking powder, baking soda and salt alternately with half-and-half, beginning and ending with dry ingredients. Stir in almonds and almond extract. Stir in pineapple and fruit and peel. Pour batter into, greased loaf pan, 8-1/2 x 4-1/2 x 2-1/2 inches. Bake in preheated 325F oven until bread is golden and toothpick inserted in center comes out clean, about 1 hour. Remove from pan; cool on wire rack.

Makes 1 loaf.
