Sweet Potato Casserole 2

3 cups mashed sweet potatoes
1/2 cup heavy cream
1/4 cup butter, softened
2 cups sugar
2 eggs, beaten
1 teaspoon vanilla
1/3 cup milk
1 cup light brown sugar
1/3 cup butter melted
1 cup pecans, chopped
1 teaspoon spices of your choice

Preheat oven to 375F. Blend sweet potatoes, softened butter sugar, eggs, vanilla and milk. Pour mixture into a casserole dish. In a separate sauce pan, simmer cream and brown sugar until it dissolves. Cook until it reaches the soft boil stage on a candy thermometer (235-240F). Remove from heat and beat well. Add melted butter and pecans. Pour this mixture over the sweet potato mixture and bake until very hot and beginning to brown.

Serves 6-8.
