Crawfish Casserole 14

One lb of crawfish tails
1/2 cup margarine, melted
One large onion, finely chopped
Two or three stalks of celery, finely chopped
One large bell pepper, finely chopped
Two pods of garlic, finely chopped
One can Campbell's Cheddar Cheese Soup
One can Campbell's Special Request 1/3 Less Sodium Cream of Mushroom Soup
One 8 or 12 oz pkg vermicelli, cooked
Bread crumbs

Saute onion, celery, bell pepper, and garlic in melted margarine. Add soups. Heat over medium heat until soups and sauteed ingredients are blended and bubbling. Add crawfish tails. Cook for 15 minutes. Add vermicelli. Mix well. Top casserole with enough bread crumbs to cover dish. Heat for 25 minutes in covered casserole dish in moderate oven at 350F). Uncover dish for last 5 minutes.

Substitutes for vermicelli may include two cups cooked rice, or 1/2 pkg of angel hair pasta.
