Crawfish or Shrimp Casserole 2

1 cup chopped onions
1 cup green peppers, chopped
1 cup celery, chopped
1/4 lb butter
2 cloves chopped garlic
1 small jar pimentos & juice
1 can cheddar cheese soup
1 tsp salt
1 can cream of mushroom soup
4 cups of peeled crawfish or 4 cups of peeled shrimp
2 cups rice
1/2 cup of bread crumbs
1 cup chopped green onions
1/3 cup chopped parsley
Hot sauce to taste

Cook onions, pepper, celery in butter until tender. Add soups, garlic, parsley, green onions. pimento and crawfish. Heat thoroughly until crawfish are cooked. Add salt and hot sauce to taste. Stir in rice and bread crumbs. Pour in a large casserole (3 quart). Sprinkle with bread crumbs. bake 30 minutes at 350F.
