Eggplant Casserole 9

1 lb fresh sausage of your choice (take casing off and fry)
1 med onion, chopped fine
1 med bell pepper, chopped
1 large eggplant, chopped into cubes
16 oz whole tomatoes
1 cup Parmesan cheese
1 cup mozzarella cheese
2 eggs
Salt and pepper to taste

Saute sausage, then drain fat off. Add onions, green peppers, tomatoes, then eggplant. Cook about 25 minutes. Add onion tops and parsley, if desired.

Combine eggs and cheese. Spoon 1/2 eggplant mixture into 2-1/2 quart casserole dish and cover with 1/2 cheese mixture. Repeat and bake 25 minutes at 375F.
