Peanut Butter Brown Rice Pudding

3 eggs, slightly beaten
2 cup brown rice, cooked
1/2 cup peanut butter
1/3 cup honey
1 tsp. ground cinnamon
2 cup milk
1/2 cup raisins or pitted dates
Whipped cream
Peanuts

In large bowl combine eggs, rice, peanut butter, honey and cinnamon; stir in milk and raisins or dates. Turn into a 10 x 6 x 2 inch baking pan. Add hot water to larger pan in depth of 1 inch. Bake in 350F oven for 25 minutes. Stir. Continue baking 20 to 25 minutes or until knife inserted near center comes out clean.
