Lemon Squares 1

1/2 lb. softened butter
1/2 cup confectioners sugar
2 cups flour
Dash salt
4 eggs
2 cups granulated sugar
6 tablespoons flour
6 tablespoons fresh lemon juice
6 tablespoons lemon rind

Heat oven to 350F. Have ready a 10 x l5 inch jellyroll pan. Blend 1/2 lb. softened butter with confectioners sugar, flour and salt. Pat evenly into pan; bake for 20 minutes. Slightly beat 4 eggs. Add granulated sugar and 6 tablespoons each of flour, lemon juice and finely chopped lemon rind. Mix thoroughly; spread over baked crust. Bake for 25 minutes. Cool, then cut into squares. Remove from pan to dust with Confectioners sugar.

Serve with tea.
