Lemon Pie 3

One 3-ounce package lemon Jell-O
2/3 cup boiling water
2 tablespoons lemon juice
2 teaspoons lemon peel, grated
2 cups ice cubes
One 8-ounce package whipped topping
1 Graham cracker crust

Dissolve completely Jell-O in boiling water, stirring 3 minutes. Add lemon juice in boiling water, stirring constantly until Jell-O is thickened about, 2-3 minutes. Remove any unmelted ice. Using wire whisk, blend in whipped topping and whip until smooth Chill if necessary until mixture will mold. Spoon into pie crust. Chill 2 hours or freeze until firm. Garnish if desired.
