Creamy Pralines 1

3 cups sugar
1 cup buttermilk
1 teaspoon baking soda
1/2 cup butter
2-3 cups pecans (halves or pieces)
1 teaspoon vanilla

Place sugar in 4-quart pot. Put baking soda in the cup of buttermilk (it will foam up). Add milk mix to sugar in pot. Stir well and cook over medium heat until a soft ball forms when dropped into cool water. Remove from heat. Add butter and vanilla. Let stand 5-10 minutes. Then beat until mixture starts to get thick and has a gloss. Add pecans and beat until well mixed. Use two teaspoons to drop pralines on waxed paper or plastic wrap. Better if not too big. Store in covered plastic containers.

Serves 20 or more.
