Flan

Custard
5 eggs
1 can Eagle condensed milk
1 can evaporated milk
1 can water
1/2 teaspoon salt
1 teaspoon anise or vanilla extract
Syrup:
1-1/2 cups sugar
1/2 cup water

Preheat oven to 325F. In blender, combine eggs, milk, salt, anise or vanilla extract and 1 can water until smooth. For best results, put mixture through a strainer. In a saucepan combine 1-1/2 cups sugar and 1/2 cup water and cook until a thick syrup forms. Transfer to oven-proof pan, if necessary turn pan to coat sides with syrup. Add custard mixture to syrup and place in water bath, with water covering pan about halfway.

Place in oven. Bake at 325F for 1 hour. Let cool thoroughly. Run knife around pan. Place flat plate on top of pan and turn upside down, flipping flan onto plate. Drizzle syrup from bottom of pan over flan.
