Japanese Fruit Cake

- 1 cup butter
- 2 cups sugar
- 4 egg
- 3 cup cake flour
- 3 tsp baking powder
- 1 cup milk
- 1 tsp vanilla
Cream together butter and sugar until smooth, then add eggs one at a time, beat well. Sift together - 3 times - flour, baking powder; then add cup milk and vanilla.
Pour 2/3 of the batter into 2 greased pans and bake at 350F until done (30 minutes); set aside to cool.
- Add to 1/3 of batter:
- 1 tbs cocoa
- 1 cup raisins
- 1 cup pecans (chopped)
- 1 tsp nutmeg
- 1 tsp cinnamon. (*this will be the center layer)
- Frosting:
- Bring to boil in saucepan: (this will be filling and icing)
- 1 large can crushed pineapple
- 2 cups sugar
- 1 cup water
- 1 coconut grated or 2 cups coconut
- 3 tbs flour or cornstarch
