Washington Pie

Double Crust:
(1 for top, 1 for bottom)

1-1/3 cups shortening
2 tsp sal
4 cups all-purpose flour, sifted

Mix together in a large bowl, shortening, flour and salt until mixture resembles corn meal. Add 10-14 tbs cold water. Roll thin. Put in greased 9x13 inch pan for bottom crust. Keep remainder of dough for top crust.

Filling:
1/2 cup sugar
10 slices stale bread
One 13 oz can evaporated milk and 2 cans water
2 cups raisins, lightly floured
3 eggs, slightly beaten
2 tbs flour
2 tsp baking powder
1 tsp vanilla flavoring
1 tsp cinnamon
1 tsp nutmeg

In a large mixing bowl, break bread into small places. Pour milk and water. Combine dry Ingredients, spices, sugar, raisins, eggs and vanilla. Mix and beat all ingredients together. Spoon into pan with crust at bottom. Add top crust onto filling. Bake in 375F oven approximately 1 hour or until top crust is lightly brown. Cut into squares.
