Liqueur Choc-O-Mint

1-1/4 cups Simple Syrup No. 2
3 tsp Chocolate Extract
2 tsp Vanilla Extract
1/4 tsp Peppermint Extract
1-1/3 cups Vodka

*** Stir together syrup, chocolate, vodka, vanilla and peppermint in a (4 cup) jar until blended. Cap jar. Store for 1 week and then serve.

Yield: @ 1-1/4 Pints.

This recipe can also be very easily doubled.

Simple Syrup No. 2
1 cup Granulated Sugar
1-1/2 cups Firmly Packed Brown Sugar
2 cups Water

Combine granulated and brown sugar with water in a large saucepan. Heat to boil while stirring often. Lower heat. Simmer for 5 minutes. Pour syrup into glass container. Cool to room temperature before preparing liqueur.

Yield: 3-1/2 Cups.
