Gumbo Soup

1 cup flour
1/2 cup oil
1 lg. onion
1 bunch green onions
2 stalks celery
1/2 bell pepper
1/2 cup parsley
1 dozen crabs
2 lbs. shrimp
2 lbs. smoked sausage
3 or 4 lbs. chicken, cut in pieces
2 tbsp. Cajun Herbed spice
1 tsp. Cajun Blend spice
1 dozen oysters
1/4 tsp. gumbo file, optional

First you make a roux; Brown flour in oil; add onions, celery, bell peppers. Saute until onions look brown, not burned. Add chicken and sausage. Boil about 2 hours or until meat is cooked. Add cleaned crabs and shrimp. Cook another half hour. Add seasonings, salt Cajun Blended and Cajun Herbed spices, red pepper and parsley. Add oysters and cook for 5 minutes. Add 1/4 teaspoon gumbo file, if desired.
