Nacho Potato Soup

15-1/4-ounce package au gratin potatoes
One 11-ounce can whole kernel corn, drained
One 10-ounce can diced tomatoes and green chiles, undrained
2 cups water
2 cups milk (may use skim milk)
2 cups processed American cheese, cubed
Dash hot pepper sauce (optional)
Fresh parsley, minced (optional)

In a 3-quart saucepan, combine potatoes and sauce mixture included in the box, corn, tomatoes and water. Mix well. Bring to a boil.

Reduce heat, cover and simmer 15 to 18 minutes, or until potatoes are tender. Add milk and cheese.

Add hot pepper sauce, if desired, at this time. Cook and stir until the cheese is melted. Sprinkle parsley on top before serving, if desired.

Serves 6-8.
