Boil mustard greens (2 bunches) until tender. Change water twice. Then drain greens and squeeze water out. Make a ball and chop real fine. Boil smoked sausage (2 lb) and cut in bite size pieces. Put mustard greens in two quarts of water, add 1/2 cup of roux. Let boil real good. (Keep adding water). Always have about 2 quarts of water. Put onions, celery, bell peppers, salt, pepper to taste. Drain sausage and put in with mustard. Cook on medium heat for about 2 hours (if frozen greens are used, no need boiling). Serve over rice.
