Brown sausage in large stock pot and drain off fat. Add other ingredients except cabbage. Bring to a boil, reduce heat and simmer covered for one hour. Add cabbage and cook for 15 to 20 more minutes. Salt and pepper to taste. Add chopped parsley just prior to serving.
A rich beef stock is a must for this recipe. Fresh cilantro is a nice substitute for parsley.
