Tomato Vegetable Soup with Shrimp or Chicken

2 cups loose pack frozen mixed cut green beans, broccoli, mushrooms and red peppers
One 10-3/4 oz can condensed chicken broth
1/8 tsp onion powder
One 24 oz can ( 3 cups) tomato juice
1/4 cup dry sherry
Two 6 oz pkg frozen cooked shrimp or 2 cups frozen diced cooked chicken
Green onions, croutons (optional)

In a large saucepan, combine frozen vegetables, chicken broth and onion powder. Bring to boil, then reduce heat. Cover and simmer to five minutes,

Stir in tomato juice. Bring to boil. Then stir in sherry and frozen shrimp or chicken. Return to boiling. Boil gently about two minutes or just until shrimp or chicken is heated. Meanwhile, if using green onions for topping, slice them.

To serve, ladle soup into individual bowls. If desired, top with onions or croutons.

Makes four servings.
