Vegetarian Rice

1 cup uncooked brown rice
1 tbsp. vegetable oil
1/2 cup chopped onions
1/2 cup green pepper
2 cup sliced zucchini
2 sm. tomatoes, cut in eighths
1 tsp. salt
1 clove garlic, crushed
2-1/4 cup boiling chicken broth

Saute rice in oil until golden brown, over low heat, about 5 to 10 minutes. Spread in a greased shallow 2-1/2 quart casserole. Layer onions, green pepper, zucchini, and tomatoes over rice. Add salt and garlic to broth. Pour over vegetables. Cover, and bake at 350F for 1 hour 15 minutes or until liquid is absorbed and vegetables are tender.

Makes 6 to 8 servings
