Jambalaya Rice Dressing

1/3 cup cooking oil
1/2 cup flour
1 cup cut up onions
1 cup cut up bell pepper
5 cloves garlic
Two 1 lb dressing mix uncooked
2 cups of water
1-1/2 tsp of salt
1/2 tsp cayenne red pepper
4-1/2 cups of cooked rice
Onion tops (optional)

In a large pot, make a brown roux using flour and oil. Add onions, bell peppers and garlic. Saute for 2-3 minutes then add dressing mix. Mix well with all seasonings. Cook on medium fire for at least one hour. Add water to mixture and continue to cook for 1/2 hour. The mix will start to thicken. Lower fire and add cooked rice.
