Rice Shrimp Dressing

2 pounds shrimp (uncooked)
Creole seasoning
3/4 lb margarine, melted
2 cups chopped celery
1 cup chopped green pepper
1 cup chopped onion
1/2 cup chopped parsley
1 cup water
8 cups cooked rice

Peel shrimp, remove vein, wash. Season shrimp with Creole seasoning according to taste. Place all ingredients except rice in a pot, bring to a boil, cover tightly, reduce heat and simmer 20 minutes. Test to see if shrimp are done, don't overcook.

Drain shrimp; save liquid. Cut shrimp into pieces. Mix thoroughly with rice. Combine this with enough of the liquid to give right consistency.

Use to stuff whole fish, or serve as dressing or side dish with baked fillets.
