In a frying pan, heat 2 tablespoons oil; add peas, peppercorn and salt. Stir fry for 5 minutes. Remove peas; set aside. Skin, clean and cut the Cornish hens. Heat remaining oil. Fry onion until golden brown. Add all other ingredients except salt for hen. Stir for a minute; add hen. Cover and cook, stirring occasionally until the hen is tender and well coated and the oil separates.
Serve hot with the peas and bread.
