Skin and clean the chicken. Prick with a fork or skewer and place in a casserole dish. Mix the ingredients for marinade and marinate the chicken for 6-8 hours, covered.
Cooking:
Preheat the broiler. Remove the bay leaves and peppercorns. Baste the chicken with marinade and place on the broiler pan. Brush with melted butter. Place the pan 5 inches beneath the broiling element and cook 10 minutes. Turn the chicken, baste, brush with melted butter, and broil 10 minutes more. Cook rice seasoned with a little saffron. Garnish with cooked green peas. Serve chicken hot on a bed of saffron rice (optional).
