Glazed Corned Beef

3 pounds corn beef
1 clove garlic
1 bay leaf
4 peppercorns
1/4 cup apple Juice
1/3 cup brown sugar
2 teaspoons prepared mustard

Preheat oven to 400F. Place corned beef in a large sauce pan and cover with cold water. Add garlic bay leaf and peppercorns. Cover and cook to a boil. Reduce heat and simmer for three hours or until tender. Remove beef from liquid and place fat side up on rack in roasting pan. Score fat in diamond pattern. Prepare glaze by combing apple juice, brown sugar, and mustard in sauce pan. Stir over low heat until well blended and slightly thickened. Pour glaze over meat. Roast in preheated oven 400F for 30 minutes, basting every 10 minutes to glaze.
