Southern Rouladen

3 pounds of boneless chuck steak
1 cup mustard
1 pound sliced bacon
1 large onion
3 tablespoons oil or non-stick cooking spray
Salt and pepper to taste

Preheat oven to 375 F. On each steak, spread mustard first over entire surface of meat, place several strips of uncooked bacon next, then cover this with thinly sliced onions and salt and pepper to taste.

Roll each steak neatly together, trying to keep all of the ingredients inside, and bind with cotton string. Cook approximately 2-1/2 hours or until tender. Remove from heat, remove string and slice at table. Can be served with rice or mashed potatoes.
