Chicken Kiev

8 chicken breasts halves, deboned
Eight 1x2 inch slices cooked ham
Eight 1x2 inch pieces of cheddar cheese
6 strips bacon, partially fried
Salt and pepper
2 eggs
2 tbs half and half or milk
3/4 cup flour
1/2 cup fine cracker crumbs
Cooking oil

Make a pocket in each breast. Insert a piece of ham and cheese which has been wrapped in a piece of bacon. Fold chicken skin around and secure with a toothpick. Season with salt and pepper to taste. Beat eggs, add milk. Combine flour and cracker crumbs. Dip in egg mixture. Roll in flour and crumbs to coat. Fry at once in oil in heavy iron skillet.

Serves 6 to 8.
