Crock Pot Beef Fajitas

3-1/2 to 4 lb beef roast
2 pkg dry fajita mix
1 large bell pepper, seeded and sliced
1 large onion, sliced

Put the roast in the crock pot without water. Add the bell pepper and onion. Sprinkle one package of the fajita mix over the top of the roast and vegetables. Cook until the meat falls apart, about four hours. By this time there will be juice in the meat. Pull the meat apart and add the second package of fajita mix and stir well. Simmer 15 minutes. Use a slotted spoon to serve the meat on po-boy buns or in toasted pitas.

Topping:
Sour cream, guacamole, shredded Cheddar cheese, and salsa.
