Pork Tenderloin

1/2 cup raisins
1/2 cup orange juice
1/4 cup water
3 tbs packed brown sugar
2 tbs cornstarch
2 tbs grated orange peel
1/8 tsp salt
2 tsp cider vinegar
1 pork tenderloin (about 1 lb)
Salt and pepper as desired
1 green onion, sliced (optional)

Combine raisins, orange juice and water in 4-cup glass measure; cover. Microwave on HIGH (100%) 3 minutes. In a small bowl, combine brown sugar, cornstarch, orange peel and salt.

Stir into raisin mixture. Microwave on HIGH (100%) 1 minute, or until thickened. Stir in vinegar; set aside. Slice pork diagonally into 1/2 inch thick slices. Place in single layer in 8 to 9 inch square glass baking dish. Season with salt and pepper as desired; cover with waxed paper. Microwave on MEDIUM- HIGH (70%) 8 to 9 minutes, or until no longer pink, rearranging meat halfway through. Drain. Pour orange raisin sauce over meat. Garnish with green onion if desired.
