Cherry Tomatoes

Finger Food
1 Ripe Avocado
2 tsp Minced Garlic
8 oz Softened Cream Cheese
1 tsp Tarragon
1 tsp Chive
1/2 tsp Salt
Dash Pepper Sauce
1-1/2 pt Cherry Tomato
Sprig Parsley
2 tsp Lemon Juice

*** Peel and pit avocado. Blend avocado and lemon juice in food processor or blender. Puree until smooth. Add herbs, cream cheese, salt and pepper sauce. Transfer into bowl and refrigerate until stiff. Cut off tops of tomatoes and scoop out the insides, drain tomato shells on a paper towel. Fill pastry bag with avocado mixture and fill tomatoes. Garnish with a sprig of parsley and serve cold.
