Grape Leaves

Finger Food
16 oz Grape Leaves
1/4 cup Butter
1/2 cup Onion
1 Clove Minced Garlic
1/2 cup Cooked Rice
1/2 cup Fresh Mint
1/2 cup Chopped Walnuts
3 Scallions
1 tsp Allspice
1/2 cup Lemon Juice
1 cup Water
1/4 cup Olive Oil

*** Drain, rinse and pat dry leaves. Heat onions and garlic in butter. Add finely chopped walnuts, rice, salt and pepper. Cool for 10 minutes, stirring frequently. Add herbs and scallions. Add half the lemon juice and water. Mix and simmer until the water evaporates. Place shiny side of leaf down and fill leaf with one tsp of filling. Roll and tuck the edges tight. Add remaining half lemon juice and water. Add 1/4 cup olive oil. Arrange grape leaves in shallow pan. Cover with lemon juice, oil and water. Place weight and plate on top. Simmer for 25 minutes.
