Pickled Veggies

1 Head Cooked Cauliflower
1 cup Oil
1/2 cup Cider Vinegar
1 Rib Sliced Celery
1 Chopped Onion
1 Slice Lemon
1 Clove Minced Garlic
1/4 tsp Peppercorns
1/4 tsp Mustard Seed
1 Bay Leaf
1/3 cup Chopped Pimento
Salt

*** Cook cauliflower florets until tender. Drain. Combine all ingredients except pimentos in a saucepan. Bring to a boil. Gently stir in pimentos. Pour over cauliflower. Cover and chill. You can substitute other vegetables (mushrooms, broccoli).

Yield: 1-1/2 Quarts
