Split each shrimp lengthwise. In large bowl, combine shrimp, rice, celery, olives, green peppers pimientos, and onions; cover and chill. Just before serving, stir together salt, pepper and mayonnaise, and toss with shrimp mixture. Spoon shrimp mixture onto crisp greens. If desired, garnish with tomatoes and whole shrimp.
