Broiled Tilapia Salad

1 lb fresh tilapia fillets
Salt
Black pepper
Paprika
1/8 lb melted margarine
3 cloves garlic, pressed
1 cup sliced celery
1 cup chopped tomatoes
2 tbs chopped green onions
1/4 cup chopped green pepper
1/4 cup mayonnaise
1/4 cup plain low fat yogurt
1/4 tsp dried oregano
1/4 tsp dried thyme
1/8 tsp white pepper
1 head of lettuce, shredded

Season tilapia with salt, black pepper, and paprika. Mix garlic and melted margarine. Broil tilapia about four minutes per side, or until almost cooked. Brush on margarine and garlic mixture on one side and broil until lightly browned, about three minutes, then turn over and brush and broil the other side. Let tilapia cool then take it with a fork and set aside.

Combine tilapia, celery, tomato, green onions, and bell pepper. Stir well. Combine mayonnaise, yogurt, oregano, thyme, and white pepper. Add to tilapia mixture, tossing gently. Cover and chill two hours.

To serve, spoon 1/2 cup mixture over about one cup shredded lettuce.

Yield: Eight servings.
