Chicken Salad Chinese Style

1/4 cup soy sauce
2 tsp prepared mustard
1 tbs vegetable oil
2-1/2 cups cooked chicken, cut in thin strips
3 cups cooked rice, cooled
1 cup sliced green onions, including tops
1 small head lettuce, shredded
Mayonnaise
1 can (3 oz) rice noodles or chow mein noodles

Blend soy sauce, mustard, and oil. Add chicken and toss lightly. Allow to stand about 1 hour. Stir in rice and green onions. Adjust seasonings, if necessary. Chill. Spoon onto beds of lettuce. Top with mayonnaise and sprinkle with generous amounts of noodles.

Makes 6 servings.
