Indian Curried Cabbage and New Zealand Apple Salad

Curry Dressing
4 cup shredded red and green cabbage
1 new Zealand Granny Smith apple, cored and diced
2 green onions, sliced

Garnish:
3/4 cup chopped, toasted cashews or peanuts
3/4 cup currants mint or coriander leaves

Prepare curry dressing; set aside. In a large bowl, combine cabbages, cored and diced apple and onion. Toss with the Curry Dressing until coated; garnish with nuts, currants and mint leaves.

Makes 5-6 servings.

Curry Dressing:
Combine:
1/2 cup plain yogurt
1/4 cup mayonnaise
1 tbs curry powder
1 tbs finely chopped chutney
2 tsp finely chopped fresh mint
1/2 tsp salt
