Indian Curried Cabbage and New Zealand Apple Salad

- Curry Dressing
- 4 cup shredded red and green cabbage
- 1 new Zealand Granny Smith apple, cored and diced
- 2 green onions, sliced
- Garnish:
- 3/4 cup chopped, toasted cashews or peanuts
- 3/4 cup currants mint or coriander leaves
Prepare curry dressing; set aside. In a large bowl, combine cabbages, cored and diced apple and onion. Toss with the Curry Dressing until coated; garnish with nuts, currants and mint leaves.
Makes 5-6 servings.

- Combine:
- 1/2 cup plain yogurt
- 1/4 cup mayonnaise
- 1 tbs curry powder
- 1 tbs finely chopped chutney
- 2 tsp finely chopped fresh mint
- 1/2 tsp salt
