Jeweled Grape and Mushroom Salad

- 2 cups thinly sliced fresh mushrooms
- 1 cup red California grapes, halved and seeded if necessary
- 1/4 cup chopped green onions
- 2 tbs chopped parsley
- Vinaigrette Dressing
- Bibb lettuce
Combine mushrooms, grapes, onion and parsley with Vinaigrette Dressing. Marinate at least one hour. Serve on lettuce-lined salad plates.
- Vinaigrette Dressing:
- Combine:
- 1/4 cup oil
- 2 tbs each red wine vinegar and lemon or lime juice
- 1 tsp salt,
- 1/4 tsp dry mustard,
- 1/8 tsp each basil, oregano and sugar
- A dash of pepper
Mix well.
Makes 1/2 cup.
