Two-Bean Rice Salad

- 3 cups cooked rice
- One 16 oz can pork and beans, drained, rinsed
- One 15 oz can dark or light red kidney beans or red beans, drained, rinsed
- 1-1/2 cups sliced carrots
- 1-1/2 cups chopped cucumber
- 1/2 cup Italian salad dressing
- 2 tbs chopped green onion
- 1/4 tsp pepper
Combine all ingredients; mix lightly. Chill 2 hours or overnight; toss before serving. Serve over lettuce leaves, if desired.
Makes eight 1 cup servings.
