- Place oysters in colander to drain. Remove bits of shell. Put corn meal (or corn meal and flour) in a paper bag. Season with salt and pepper. Shake a few oysters at a time in the corn meal. Fry in hot fat 375F cooking a few at a time, until brown.
- Or season oysters, roll in flour, then dip in egg, milk mixture, and again in seasoned corn meal or fine cracker crumbs. Fry in hot oil. Drain on absorbent paper.
