Spinach and Rice Fish Roll-ups

1/4 cup finely chopped onion
1 garlic clove, minced
1 tbsp. oil
6 oz. (1-1/2 cup) shredded mozzarella cheese
1 cup cooked regular rice
2 cup Green Giant Frozen cut leaf spinach, thawed (from 16 oz. bag)
1/4 cup grated Parmesan cheese
1 egg white (reserve yolk for later use)
1/4 tsp. salt
1/8 tsp. pepper
1 tbsp. lemon juice
Six 4 oz fresh or frozen sole or flounder fillets, thawed*

Heat oven 400F. In small saucepan, cook onion and garlic in oil for 5 to 7 minutes or until tender. Remove from heat. In medium bowl, combine onion mixture, mozzarella cheese, rice, spinach, Parmesan cheese, egg white, salt and pepper; blend well. Pour lemon juice into 12x8 inch baking dish. Set aside. Cut each fillet lengthwise into two equal strips. Spread 1/4 cup spinach mixture onto each fillet strip; roll to enclose filling. Secure with toothpick. Place cut side down in prepared baking dish. Cover with foil. Bake at 400F for 30 to 40 minutes or until fish flakes easily with fork.

Makes 6 servings.

*Tip: For ease of preparation, use thin, flat fish fillets.
