Dried Shrimp Potato Balls

1 cup dried shrimp
2 eggs, beaten
Salt and red pepper
1-1/2 cups mashed potatoes
1/2 cup green onion top
2 tablespoons parsley flakes
Oil for deep frying

Cover shrimp with water. Bring to a boil. Set aside for 1 hour. Discard water and chop shrimp very fine. Add rest of ingredients and mix thoroughly. Drop from a spoon into hot cooking oil 375-400F. Fry until brown. Drain on paper towels. Serve with tartar sauce, if desired.

Serves 4-5.
