Fiesta Fish Roll-Ups

4 fish fillets (about 2 lb)
Salt, pepper and paprika
2 lemons, thinly sliced
1/2 cup Mayonnaise
1/4 cup thinly sliced green onions
2 tbs lemon juice
2 tbs diced pimento
1 tsp chopped parsley

Preheat oven to 400F. Season fish with salt, pepper and paprika. In a buttered baking dish, arrange lemon slices. Roll up each fish fillet, starting with the largest end. Place on top of lemon. Combine remaining ingredients and spoon over fish roll-ups. Bake at 400F for 15-20 minutes. Garnish with pimento strips, scallion brushes and parsley if desired.

Makes 4 servings.
