German Style Cooked Apple and Cabbage

8 cup red or green cabbage, shredded
5 cup (about 1 1/2 lb.) apples, pared, cored, and sliced
4 cup boiling, salted water
4 slices bacon, diced
1 cup sliced onion
2 tbsp. ea. vinegar and sugar
1 tsp. fennel, crushed (optional)
Pepper to taste

Simmer cabbage and apples in water about 5 minutes or until barely tender; drain. Pan-fry bacon and onion until onion is tender; stir in remaining ingredients. Pour over cabbage and apples and mix lightly.

Makes 6 servings
