Squash Boats

10 yellow squash
1 package frozen chopped spinach
1/3 cup Parmesan cheese
3/4 cup or more bread crumbs
1 small onion chopped fine
2 eggs, beaten
4 tablespoons melted butter
1 cup Cheddar cheese grated
Lemon pepper to taste

Preheat oven to 350F. Slice off side of squash and scoop out center to make boats. Cook cutout part with onion in just enough water to cover until tender. In meantime, place boats in greased oven-proof dish. Drain squash completely, and mix with eggs, butter, cheese, pepper and crumbs. Stir in drained spinach. Add more crumbs if watery. Spoon into boats. Bake 30 to 40 minutes in oven at 350F.

Serves 8-10.
