Baked Beans 1

1 large onion, chopped fine
Five 15-ounce cans pork and beans
or
One 75-ounce can
1-3/4 cups Catsup
3/4 to 1 cup light brown sugar
2-1/2 tablespoons powdered dry mustard
2-1/2 tablespoons Lea and Perrins Worcestershire sauce
1 tablespoon margarine
Lean slices smoked bacon

Preheat oven to 350F.

Drain beans until all tomato juice is drained through colander. Saute onions and margarine until barely soft. Mix with all ingredients except bacon in a sauce pan. Mix well, tasting to suit your taste. Pour into casserole dish and cover top with lean slices of smoked bacon covering all beans mixture. Do not cover. Bake 35 minutes. Check to see if bacon is well cooked. If not, turn oven down to 325F and bake until bacon is cooked. Do not use less of dry powdered mustard or hot flavor will be lost. (Hot sauce would have a vinegar flavor).

Serves 10-12.
