Hambone Hush Puppies

3/4 cup of flour
1 cup yellow meal
4 teaspoons baking powder
1 pinch ground cumin
1 pinch cayenne pepper
1/4 teaspoon salt
1/4 teaspoon sugar
2 extra large eggs
2 tablespoons scallions, finely chopped
3/4 cup buttermilk
1/4 cup smoked ham, diced
Powdered sugar to taste

Special utensil: Deep frying pan.

In a large mixing bowl, comme dry ingredients. Add eggs and beat well. Next, whisk in the buttermilk, scallions and diced ham. Using your hands, form batter into small, round balls (about 2 teaspoons batter per ball) and deep fry in oil at 350F. Garnish with powdered sugar.
