Combine ricotta and Parmesan and set aside. Boil vegetables (cauliflower, broccoli, carrots) for 4-5 minutes. Add 2 teaspoon salt to water. Remove vegetables and keep water to cook in pasta. Heat olive oil, garlic in large skillet. When garlic is browned stir in mushrooms, salt and red pepper and saute about 5 minutes. Stir in vegetables and cook about 10 more minutes. Cook fettuccine about 9-10 minutes in boiling water. Drain. Mix fettuccine, vegetables and cheese. Mix together. Reheat and serve.
