Mango Pepper Appetizer

- 1-1/2 cup mange slices, chopped
- 1/2 cup red bell pepper, chopped
- 1/2 cup yellow bell pepper, chopped
- 1 cup celery, chopped
- 1/3 cup green onion tops
- One 8-ounce can corn, rinsed
- One 16-ounce can small black beans, rinsed
- Dressing:
- 1/3 cup olive oil
- 1/3 cup vinegar, wine or cider
- 2 tablespoons fresh lemon juice
- 2 tablespoons fresh orange juice
- 2 tablespoons fresh cilantro, minced
- 2 tablespoons fresh parsley, minced
- 2 tablespoons sugar
- 1 clove garlic, minced
- Salt, cayenne and coarse black pepper to taste
Place rinsed beans and corn in a serving bowl. Chop the rest of the vegetables into pea-sized pieces. Add to bowl. Mix dressing well. Correct seasonings to taste. Toss vegetables with dressing. Chill, toss again.
Serves 6-8.
