With a sharp knife, trim the edges of the pastry. From each side cut a strip of 1/4-inch. On the larger piece, paint the border 1/4-inch down with beaten egg. Carefully place the thin strips on the edges. Brush the top of the border with egg. Then brush the inside to waterproof pastry. Prick the pastry with the fork many times. Bake in a 450F oven for 18-20 minutes until the pastry is cooked. Arrange the fruit and cream on the pastry and serve. If fruit only is used, add whipping cream to each serving.
