Fig Bran Muffins

1/2 cup Solid Shortening
3/4 cup Sugar
1 Egg
1/4 cup Bran Cereal
2/3 cup Milk
1 tsp Vanilla Extract
1 cup Sifted Flour
2 tsp Baking Powder
1/2 tsp Salt
18 Preserved Drained Figs

*** Cream shortening and sugar; add egg and beat until light and fluffy. Soak bran in milk; add vanilla. Add sifted dry ingredients to creamed mixture alternately with bran and milk. Drop a tsp of batter in bottom of each greased muffin cup; top with one fig and fill cups 2/3 full of batter. Bake @375F about 25 minutes.

Yield: 18 Muffins
